Why we love it
In a stroke of ingenuity driven by their dedication to sustainability, Hartshorn Distillery found a way to combine the fruits of their land, which is part distillery and dairy farm. Sheep whey is a byproduct of the dairy industry and is typically discarded, but the family saw an opportunity to turn this waste product into a unique and sustainable ingredient for their spirits.
About Hartshorn
The Hartshorn Distillery is the only distillery in Australia to use sheep whey as a key ingredient in its spirits. The whey is mixed with yeast and warm water in a fermentation tank and left to ferment for a few days, resulting in a "sheep whey wash".
